What is bean to bar chocolate?

Bean to bar chocolate is chocolate made by a single maker who handles every step themselves — sourcing raw cacao beans, roasting, grinding, refining, and molding the finished bar. Most chocolate is instead made from pre-made chocolate (couverture) bought from industrial suppliers and melted down. Bean to bar makers start from the bean.

How bean to bar chocolate is made

After cacao is harvested, the beans are fermented and dried at origin — usually by farmers or cooperatives. The bean to bar maker buys those dried beans, often directly, and takes over from there.

In the workshop, beans are sorted, roasted, cracked and winnowed to separate the nibs from the shells. The nibs are ground and refined with sugar (and sometimes cocoa butter or milk) for hours or days, then tempered and molded into bars. Each step — roast time, refining length, how much sugar — is a choice that shapes the final flavor.

Why it tastes different

Because one maker controls the whole process, they can roast lightly to keep fruity or floral notes, or longer for deeper, nuttier ones. Industrial chocolate is optimized for consistency; bean to bar is usually optimized for character.

Many bean to bar makers also work with single-origin beans, so the bar reflects a specific place and harvest. Ingredient lists tend to be short: cacao, sugar, and perhaps cocoa butter.

Bean to bar vs. craft vs. artisan

"Craft chocolate" is broadly used for small-batch chocolate made with care, and often overlaps with bean to bar. "Artisan" or "chocolatier" usually refers to someone making bonbons or confections from purchased chocolate — skilled work, but a different craft. If a wrapper says bean to bar, the maker made the chocolate itself.

How to get into bean to bar chocolate

Start with a few bars from different makers or origins, taste them slowly side by side, and note what you notice. Within a handful of tastings you'll start recognizing styles and the makers whose choices you like.
